Description
Sodium Metabisulphite is a Sulphur based product that is used primarily to sterilise wine, cider and in beer making to kill bacteria and to inhibit the growth of most wild yeast. Sodium Metabisulphite is also used to eliminate both free chlorine and the more stable form, chloramine, from brewing water. When chlorine and chloramine are present in the brewing water they combine with malt phenols in the wort to create a compound called chlorophenol, which gives the beer a medicinal (Elastoplast) taste.
